Last weekend, we watched lots and lots of football. It was a tough day for us UGA fans, but it was so much fun hanging out with friends!
Honestly, who watches football without snacks? I knew I wanted something sweet and salty...and I had all the ingredients to make caramel popcorn. Last time I made it, it was a disaster. I made way too much and we were forced to snack on it for weeks and weeks.
So I learned from my mistakes and made a much smaller batch! Hope you enjoy it as much as we did!
Caramel Popcorn:
Ingredients-
1 bag microwave popcorn
1/4 cup butter
1 cup brown sugar
1/4 cup corn syrup (light)
1/2 teaspoon salt
1/2 teaspoon vanilla extract
1/4 teaspoon baking soda
1. Preheat oven to 250. Pop popcorn according to directions and put in oven to keep warm. Make sure to take out all the kernels now :)
2. In a medium saucepan, melt butter over medium heat. Stir in brown sugar, corn syrup and salt. Bring to boil, while stirring constantly. Then boil for 4 minutes without stirring. Remove from heat and stir in baking soda and vanilla.
3. Pour caramel over popcorn and use wooden to spoon to coat popcorn.
4. Spread out on large baking sheet, bake in oven for 1 hour total. Take out every 15 minutes and stir popcorn.
5. Allow to cool completely before breaking into small pieces. Enjoy!
That sounds so good!!!
